rhubarb ice dessert tangy & refreshing

A good friend here gave me this recipe to try. She was going to bring me a taste, but her husband performed one of his magic tricks, and it all disappeared! I think it sounds good. Maybe you would like to try it. Rhubarb has such a beautiful sweet tart taste when cooked. I have a patch of Strawberry Rhubarb, and may have enough to pull this week. Hopefully! If you have to buy rhubarb, choose the narrow red ones. Usually found at a Farmers Market. I think you will like it better than the thicker green stalks. Warning! do not use or cook the leaves they are toxic!!! Nancy 6/1/13

Ingredients

  • 4 cups chopped and diced rhubarb....try to buy the thin red ones.
  • 1/4 cup brown sugar
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 1-1/2 cup water

How To Make rhubarb ice dessert tangy & refreshing

  • Step 1
    In a large pot, add 1-1/2 cups of water, then the rhubarb, sugars and salt. Cook over medium heat, stirring and mashing, while it cooks. Pour this mixture through a strainer into a bowl , push it through a strainer with a spoon. Use all that you can push through. Let cool. Mix and transfer to a shallow pan and freeze,for 4 hours. Each hour mix and mash in the pan, then back into the freezer. Spoon into bowls, top with a couple fresh strawberries.
