I read an article in a magazine that suggested mixing canned pumpkin with yogurt to add flavor and nutrients. After doing this, I decided to experiment a bit...and it turned out delicious!

Ingredients
- 32 ounces low-fat plain yogurt
- 15 ounces canned pumpkin
- 1 teaspoon vanilla extract
- 1/4 cup sugar (can substitute honey)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 tablespoon ground ginger

Step 1Mix all ingredients together.

Step 2Place in an ice cream maker and let mix for 20 minutes or until thickened to desired consistency. Depending on the size of your ice cream machine, you may have to work in two batches. I used the Cuisinart Frozen Yogurt, Ice Cream and Sorbet Maker.

Step 3Serve with ginger snaps, granola, or graham crackers.
