nicki's mint chocolate chip ice cream
Nicki wanted to use the chocolate mint he had growing in back of his apt, and asked could we make some chocolate chip mint ice cream. I said why not and we put our heads together and came up with this. It is minty, chocolatey and really refreshing.

Ingredients
- 1 cup whole milk
- 3/4 cup sugar
- - pinch of salt
- 2 cups heavy cream
- 2 teaspoons pure vanilla extract
- 2 cups chocolate mint leaves
- 2 ounces vodka
- 1/3 cup mini chocolate chip pieces
- 2 to 3 - drops green food color optional
How To Make nicki's mint chocolate chip ice cream

Step 1In a medium bowl use a mixer to combine the sugar and milk. Continue to beat on low until sugar is combined.

Step 2Stir in the heavy cream salt and vanilla.

Step 3Cover and chill overnight.

Step 4Next day in a food processor (I used my Ninja) pulse the mint leaves unil finely chopped. Add the vodka and pulse again. Let sit for at least 1 hour.

Step 5Strain the vodka/mint mix through a coffee filter, squeezing out all the liquid.

Step 6Put the ice cream base in your ice cream machine, and add the mint/vodka liquid, process to manufacturers directions.

Step 7The last 5 minutes add the chocolate chips, and food color.

Step 8Tranfer to a freezer container. and allow to firm up before serving.
