grandma's coconut ice cream

I forgot all about this recipe , I got this recipe from my Grandma over 30+ years ago. I use to make this all the time , Its very delicious ..course home made ice cream always is...

Ingredients

  • 3 tablespoons quick cooking tapioca
  • 2 cups scalded milk
  • 1/2 cup sugar ; divided
  • 1 - egg yolk
  • 1 1/2 teaspoons vanilla
  • 2 - egg whites
  • 1/4 teaspoon salt
  • 1 cup thick cream
  • 1 cup toasted coconut

How To Make grandma's coconut ice cream

  • Step 1
    In the top of a double broiler ; Stir together the tapioca and the scalded milk ; Cook for 15 minutes or so until it thickens , Make sure you stir it often. Add 1/4 cup of the sugar during the last few minutes of cooking.
  • Step 2
    Press mixture through a sieve and Beat in an egg yolk and the vanilla.
  • Step 3
    Whip egg whites gradually adding the other 1/4 cup of the sugar and the salt.
  • Step 4
    Fold in the into the tapioca mixture.
  • Step 5
    Whip the cream until thick and fold in to the mixture.
  • Step 6
    Fold in the coconut to the mixture.
  • Step 7
    Pour into two shallow trays or you could use one deep dish and freeze Quickly.
