Ingredients
- 3 cups milk
- 1 cup cream
- 1 stick large, cinnamon
- 1 3 " strip lemon,
- 6 medium egg yolks
- 1 1/2 cups white sugar
- pinch sea salt
- 1 teaspoon pure vanilla extract,
How To Make easy cinnamon ice cream

Step 1In a pot add 2 cups of milk, cinnamon stick and lemon peel. Simmer gently, then remove from heat, and set aside until required.

Step 2In a small bowl add the egg yolks and gently beat. Slowly add in the remaining milk, cream, sugar and salt, mix well.

Step 3Add the egg mixture in the bowl to the pot of scented milk. Heat on low and bring to a simmer, stirring constantly. Do not allow to BOIL.

Step 4Take the mixture off the heat and remove and discard the cinnamon and lemon rind. Add in the vanilla extract and mix well.

Step 5Allow the ice cream mixture to cool. Pour the cooled ice cream mixture into an ice cream maker, and freeze according to the manufacturer's instructions.
