this is a great ice cream ob a very hot day and we all love it

Ingredients

  • 1/3 cup heavy cream
  • 1 can coconut milk, unsweetened
  • 1/4 cup shredded unsweetened coconut
  • 1/2 - avocado
  • 3 tablespoons peanut butter
  • 2 tablespoons lime juice
  • 4 tablespoons honey (optional)
  • 1/2 cup fresh or frozen blueberries

How To Make blueberry coconut ice cream

  • Step 1
    place all ingredients in blender or food processor. blend until very smooth, adding honey to taste.
  • Step 2
    chill mixture by putting the whole blender jar in the fridge.
  • Step 3
    when cold, do one more blend to smooth out the now softer coconut.
  • Step 4
    run through your ice cream maker according to the instructions witch came with it.
  • Step 5
    if you don't have a ice cream freezer, put it in the freezer for 30 minutes and stir.
  • Step 6
    repeat the freeze/stir cycle until you have ice cream. top with berries.
