  • 1/3 c
    heavy cream
  • 1 can(s)
    coconut milk, unsweetened
  • 1/4 c
    shredded unsweetened coconut
  • 1/2
  • 3 Tbsp
    peanut butter
  • 2 Tbsp
    lime juice
  • 4 Tbsp
    honey (optional)
  • 1/2 c
    fresh or frozen blueberries

How to Make blueberry Coconut Ice Cream


  1. place all ingredients in blender or food processor. blend until very smooth, adding honey to taste.
  2. chill mixture by putting the whole blender jar in the fridge.
  3. when cold, do one more blend to smooth out the now softer coconut.
  4. run through your ice cream maker according to the instructions witch came with it.
  5. if you don't have a ice cream freezer, put it in the freezer for 30 minutes and stir.
  6. repeat the freeze/stir cycle until you have ice cream. top with berries.
