2Spray a 15X10 baking sheet (jelly roll pan) with nonstick cooking spray
3In a large bowl combine all dry ingredients, oats, flour, brown sugar, almond slices, cinnamon, and nutmeg
4In a microwave safe bowl combine wet ingredients, honey, butter, peanut butter (if using) and microwave until butter is melted. Stir and then add vanilla.
5Pour melted mixture over oat mixture, stir well
6Spread into your baking dish and make sure it is spread out well.
7Bake for 70-75 minutes, stir or flip half way through. Towards the end it will smell a little too done but mine has always been fine.
8When its finished it will still be a little soft, stir and break it up a couple times as its cooling and it will crisp up. I store mine in a gallon size Ziploc bag but any air tight container will work.
You can add dried fruit at this point as you are mixing it up!
