This is one of my favorite desserts. It is so light and refreshing. The lime juice keeps the bananas from turning brown. I like sweets but I am a diabetic so I think of ways to eat a lot of fruit. This is one I think you will like.

  • 1 large
    lime, juice and pulp
  • 2 dash(es)
    vanilla extract
  • 1 pinch
  • 3 large
    cutie oranges, sectioned and peeled
  • 4 large
    bananas, sliced into coins
  • 1 Tbsp
    unsweetened coconut, shredded

How to Make Zelda's Banana Coins with lime and Cuties


  1. In a small bowl, combine lime juice and pulp, vanilla, cinnamon. Its best to use a small whisk or fork so cinnamon doesn't clump up.
    In a large bowl, combine cuties, bananas, and coconut. Pour lime mixture over them and toss well, until all the fruit is coated. Serve at room temperature or slightly chilled in small sundae dishes, for dessert or breakfast.
