summertime leftover dessert parfait
During the summer months, moms know how incredibly bored the kids get with the same old snacks. We moms need to kick things into high gear in terms of creative snacking, while maintaining a healthy balance in our children’s diet. I was in the kitchen getting creative when I noticed the leftover cake we had in the fridge that I baked with my youngest son, some fat-free vanilla yogurt, and some fruit in the fridge. That's where I came up with this kid-approved and somewhat healthy snack to use up leftovers in the fridge, and sneak in nutrition in fruit form. My kids loved it - you will too!

Ingredients
- 8 tablespoons fat free or low fat french vanilla yogurt, divided amongst two bowls
- 1 - chocolate chip granola bar, crumbled between two bowls
- 1 cup strawberries and blueberries mixed, divided amongst two bowls
- 1/4 cup leftover birthday cake or any cake
How To Make summertime leftover dessert parfait

Step 1Put about 4 heaping TBSP of yogurt into two bowls.

Step 2Top the yogurt with half of the crumbled granola bar, dividing equally between the two bowls.

Step 3Top with about a 2 inch section of crumbled cake pieces per bowl.

Step 4Add about 1/4 cup of fresh berries to the top of the mixture.

Step 5Dig in and enjoy!
