spiced apple rings
Found this recipe at cooks.com (http://cooks.com/4z7a84k0). Unfortunately, it didn't give a measurement for the apples, nor even a number of jars to use for canning. However, my main interest in it was for the spice ratios it uses, so we can extrapolate from other recipes the quantity of apples.

- - hard apples
- 8 cups water
- 4 teaspoons red or green food coloring
- 4 cups sugar
- 1 teaspoon red hot candy
- 1 teaspoon cinnamon
- 1 teaspoon whole cloves
- 1 teaspoon whole allspice
- 1 teaspoon mace
How To Make spiced apple rings

Step 1Slice and core hard apples and pack in sterilized jars.

Step 2Make a syrup of 8 cups water, 4 teaspoons red or green food coloring, 4 cups sugar, 1 package red hot candy. Put 1 stick of cinnamon, 1 teaspoon whole cloves, 1 teaspoon allspice, 1 teaspoon mace in cloth bag. Place in syrup and bring to a boil.

Step 3Pour syrup over hot jars of apple rings.

Step 4Process in hot water bath: pints - 25 minutes; quarts - 30 minutes.
