This Rhubarb Delight is one of those old-fashioned desserts that never goes out of style—and trust me, it disappears fast. Passed down from my Grandma Eunice, this recipe is pure comfort in a pan. Tart rhubarb gets perfectly sweetened with strawberry gelatin (yes, the classic kind!), then finished with a buttery, golden streusel topping that adds the best crunch. Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 2 eggs
  • 2 packages 3oz. packages strawberry jello
  • about 4 cups of sliced rhubarb

How To Make rhubarb delight

  • Step 1
    1. Prepare the Base: Preheat your oven to 350°F (175°C). In a large bowl, mix the brown sugar, softened butter, flour, baking powder, and eggs together until well combined. Press this mixture evenly into the bottom of a 13x9-inch baking pan, forming a crust.

    2. Prepare the Rhubarb and Jello: Wash and slice the rhubarb into 1/2-inch pieces. Scatter the sliced rhubarb evenly over the crust, covering it completely. Sprinkle the dry strawberry Jello powder over the rhubarb.

    3. Make the Streusel Topping: In a separate bowl, combine the softened butter, granulated sugar, and flour for the streusel topping. Mix until crumbly. Sprinkle this mixture evenly over the top of the rhubarb.
