This fruit salad is memorable. A delightful mix of fruit chunks served with a delicious topping garnished with toasted coconut and chopped nuts. It doesn't get any easier than this... and it tastes great too.

Ingredients For refreshing fruit salad

  • 1 c
    whipped cream
  • 2 1/2 Tbsp
    white sugar
  • 0
    small pinch (fine sea salt)
  • 1 tsp
    vanilla, pure extract or paste
  • 2
    egg whites (beaten)
  • 2 1/2 Tbsp
    white sugar
  • 2 c
    mixed fruit (pineapple, peaches, pears, plums, strawberries) cut into chunks
  • 1/2 Tbsp
    lemon juice, fresh squeezed
  • 2 Tbsp
    white sugar
  • toasted coconut (garnish - optional)
  • finely chopped walnuts (garnish - optional)

How To Make refreshing fruit salad

    Cream: In a large bowl add heavy cream, sugar, salt and vanilla; beat until light peaks form. Set aside until needed.

    Meringue: In another large bowl add the eggs and sugar and beat until soft stiff peaks form. Gently mix the eggs into the cream, making sure to blend well. Cover and refrigerate. Stir before serving.

    Fruit: You will need 2 cups of mixed fruit. (pineapple, peaches, pears, plums, strawberries) Cut all the fruit into medium size chunks.

    Add the fruit into a large bowl and mix with the lemon juice and the last of the sugar, mixing well. Set aside on counter until ready to serve.

    This is best when the fruit are fresh and juicy. To serve: put fruit into serving dishes and top with the cream mixture, garnish with a little coconut and nuts.
