grated lemon rind
purple plums, pitted and quartered
regular oats, uncooked
firmly packed brown sugar
1Preheat oven to 400°F. Spray a 2 1/2 quart casserole dish with cooking spray.
2Combine first 3 ingredients, in a large bowl; stir well. Add plums, and toss gently to coat. Add lemon juice, and toss gently. Let stand 30 minutes.
3Combine oats, flour, and brown sugar, in a small bowl. Cut in butter, with a pastry blender, until mixture resembles coarse meal. Stir in walnuts.
4Spoon plum mixture into the prepared dish. Cover, and bake for 40 minutes. Sprinkle oat mixture over plums. Bake, uncovered, 15 minutes, or until lightly browned. Serve warm. Makes 12 servings.
