Pineapples are abundant in the Azores. This is an easy light dessert.

Ingredients

  • 4 slices fresh pineapple, 1/2 inch thick each
  • 2 teaspoons granulated sugar (see note)
  • 1/4 cup ruby port (or madeira)
  • - fresh mint leaves, for garnish

How To Make pineapple with port (ananas ao porto)

  • Step 1
    Place each slice pineapple on dessert plate; sprinkle with sugar. NOTE: If pineapple is very sweet, omit the sugar.
  • Step 2
    Sprinkle 1 tablespoon of the port over each pineapple slice. Cover and refrigerate at least 4 hours.
  • Step 3
    Garnish with fresh mint leaves.
