pineapple and peach cobbler

I wanted to make peach cobbler for company coming, but did not have enough peaches so I used some canned pineapple chunks with what I had...Turned out very good..even my son who doesn't like pineapple had seconds. I hope you like it too!

Ingredients

  • FRUIT MIXTURE
  • 4 - ripe peaches, peeled and chunked
  • 20 ounces can pineapple chunks, drained
  • 3 tablespoons rum
  • 3 tablespoons pineapple juice
  • 1/4 teaspoon cinnamon, ground
  • 1/8 teaspoon cloves,ground
  • 1/8 teaspoon nutmeg, ground
  • 1/8 teaspoon ginger, ground
  • 1 tablespoon (scant),cornstarch
  • 1/2 cup brown sugar, lightly packed
  • TOPPING
  • 1 cup bisquick
  • 1/2 cup half and half
  • 1/4 cup brown sugar, lightly packed
  • SAUCE AS GARNISH
  • 8 ounces cream cheese, softened
  • 1 cup lemon curd
  • 1/4 cup powdered sugar
  • 1 tablespoon rum
  • 2 tablespoons lemon juice, fresh

How To Make pineapple and peach cobbler

  • Step 1
    Preheat oven to 350^. Spray a 10-inch square baking dish; set aside.
  • Step 2
    Place peaches, pineapple, rum, pineapple juice and all the spices, cornstarch and sugar in a medium saucepan over medium heat and bring to a boil. Turn heat down and simmer for 8 minutes, until slightly thickened.
  • Step 3
    Remove from heat and pour into prepared casserole dish.
  • Step 4
    TOPPING: In a medium bowl, mix together all ingredients . Dollop mixture over top and spread to cover fruit as much as possible. Bake for 20 to 25 minutes until browned well and bubbly.
  • Step 5
    GARNISH: In a small bowl, blend together ingredients until smooth. Spoon on individual cobbler servings,,maybe a little whipped topping on too!
