I love Greek Yogurt - it has loads of protein, few carbs, and the non-fat kind has no fat, but lots of creaminess and full flavor. I hadn't tried pineapple before in yogurt - but I had some fresh pineapple leftover from making a pizza the night before, so here is my breakfast creation.

Ingredients
- 1 - container (5.3 oz) plain non-fat greek yogurt
- 1/3 cup chopped fresh pineapple
- 1/8 teaspoon coconut extract
- 1 package stevia or other noncaloric sweetener
- 1 pinch flaked coconut (optional)
How To Make piña colada yogurt

Step 1If desired, microwave the pineapple for 30 seconds on high power. It helps break it down, and it blends better, but it's not necessary.

Step 2Stir together the pineapple, yogurt, stevia, and coconut extract. If desired, top with just a pinch of flaked coconut. Serve immediately.
