I love Greek Yogurt - it has loads of protein, few carbs, and the non-fat kind has no fat, but lots of creaminess and full flavor. I hadn't tried pineapple before in yogurt - but I had some fresh pineapple leftover from making a pizza the night before, so here is my breakfast creation.

yield 1 serving(s)

Ingredients

  • 1 - container (5.3 oz) plain non-fat greek yogurt
  • 1/3 cup chopped fresh pineapple
  • 1/8 teaspoon coconut extract
  • 1 package stevia or other noncaloric sweetener
  • 1 pinch flaked coconut (optional)

How To Make piña colada yogurt

  • Step 1
If desired, microwave the pineapple for 30 seconds on high power. It helps break it down, and it blends better, but it's not necessary.
  • Step 2
Stir together the pineapple, yogurt, stevia, and coconut extract. If desired, top with just a pinch of flaked coconut. Serve immediately.
  • Step 3
