peach cobbler supreme with nuts
Trying to organize my recipes I came across an old browned newspaper clipping and found this delight! The only addition I made was to make the pecans, but you can easily use slivered almonds or walnuts. This cobbler reminds me of the many times I enjoyed my great aunt's freshly baked cobblers when as a child my Pop-Pop and I would walk down just 2 houses to enjoy her delicious cobblers. As it bakes the aroma will make you eager for it to get done! We love it!

Ingredients
- 8 - cups fresh sliced peaches
- 2 cups sugar
- 2-3 teaspoons corntarch
- 1/2 teaspoon nutmeg
- 1 teaspoon almond extract
- 1 cup chopped pecans
- - pastry for double-crust, 9-inch pie
How To Make peach cobbler supreme with nuts

Step 1Combine peaches, sugar, cornstarch and nutmeg in a large saucepan. Let sit until syrup forms.

Step 2Bring peach mixture to a boil and cook over low heat 10 minutes or until tender.

Step 3Remove from heat; add nuts, butter and almond extract. Stir well.

Step 4Spoon half of peaches into a lightly buttered 10 x 8-inch baking dish.

Step 5Roll out half of pastry to 1/8-inch thickness on a lightly flour surface. Put on top of peaches. Bake in preheated 475 degree oven 12 minutes or until golden brown.

Step 6Spoon remaining peaches over baked pastry. Roll out remaining pastry and cut into 1/2-inch strips; arrange in lattice design over the peaches.

Step 7Return to oven to bake 10-15 minutes or until lightly browned.
