mini caramel apple cheesecakes

I love to bring these little special cakes to any gathering..they're wonderful to look at, great tasting and easy to make.

Ingredients

  • 1 - 10 oz pkg frozen puff pastry shells
  • 4 ounces softened cream cheese
  • 1 cup milk, divided. i used 2%
  • 1 package instant vanilla pudding mix
  • 1 - grannysmith apple chopped fine
  • 3 tablespoons caramel ice cream topping

How To Make mini caramel apple cheesecakes

  • Step 1
    Heat oven to 425. Bake shells as directed on baking sheet. Let cool. In bowl, beat cream cheese and 1/4 cup milk.
  • Step 2
    Beat in pudding mix and remaining milk. Remove tops of each pastry shell along w/ the doughy center, discard doughy center, but keep tops.
  • Step 3
    Fill shells with pudding mix. Top w/ apples and caramel. Serve w/ pastry tops.
