leda's rhubarb bars
Got this recipe from a lady I worked with in a Nursing Home about 40 years ago make it every year when rhubarb is ready and I always think of this Dear Lady.

Ingredients
- 3 cups rhubarb (diced)
- 1 1/2 cups sugar
- 2 tablespoons corn starch
- 1/3 cup water
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- CRUST AND TOPPING
- 1/2 cup butter
- 1 1/2 cups rolled oats
- 1 1/2 cups flour
- 1 cup brown sugar
- 1/2 cup chopped walnuts
How To Make leda's rhubarb bars

Step 1In a medium sauce pan combine rhubarb,sugar, cornstarch, water, vanilla,and soda.

Step 2Stirring constantly bring to a boil and cook till thick and bubbly, rhubarb should be cooked down. Set aside.

Step 3In a large mixing bowl cut butter into oats, flour, sugar, and nuts until crumbly.

Step 4Spray a 13x9" pan (I use pam) pat 3/4 of the crumb mixture in the bottom of the pan.

Step 5Spread rhubarb filling over crumb mixture in pan sprinkle rest of crumb mixture on top.Bake at 375 degrees for 30-40 minutes

Step 6Remove from oven cool in pan, on wire rack ,makes about 2 dozen bars.
