leda's rhubarb bars

Got this recipe from a lady I worked with in a Nursing Home about 40 years ago make it every year when rhubarb is ready and I always think of this Dear Lady.

Ingredients

  • 3 cups rhubarb (diced)
  • 1 1/2 cups sugar
  • 2 tablespoons corn starch
  • 1/3 cup water
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • CRUST AND TOPPING
  • 1/2 cup butter
  • 1 1/2 cups rolled oats
  • 1 1/2 cups flour
  • 1 cup brown sugar
  • 1/2 cup chopped walnuts

How To Make leda's rhubarb bars

  • Step 1
    In a medium sauce pan combine rhubarb,sugar, cornstarch, water, vanilla,and soda.
  • Step 2
    Stirring constantly bring to a boil and cook till thick and bubbly, rhubarb should be cooked down. Set aside.
  • Step 3
    In a large mixing bowl cut butter into oats, flour, sugar, and nuts until crumbly.
  • Step 4
    Spray a 13x9" pan (I use pam) pat 3/4 of the crumb mixture in the bottom of the pan.
  • Step 5
    Spread rhubarb filling over crumb mixture in pan sprinkle rest of crumb mixture on top.Bake at 375 degrees for 30-40 minutes
  • Step 6
    Remove from oven cool in pan, on wire rack ,makes about 2 dozen bars.
