This recipe has probably been around forever. I bring it back now because it looks so festive on your holiday table. Especially w/ a dollop of whipped cream and a raspberry to look like a Santa hat! Creamy, cool, and refreshing. Subtle sweetness combined with a slight saltiness from the pretzel crust is a merry match! You may use strawberry but we prefer the tanginess of the raspberry. Please note that the 3 layers need separate refrigeration times. You will want to start this early in the day of or the day prior to serving. Lots of refrigeration time but minimal labor required.

Ingredients

  • FOR 1ST LAYER:
  • 2 1/2 cups crushed pretzels
  • 3/4 cup butter, unsalted
  • 3 tablespoons white sugar
  • FOR 2ND LAYER:
  • 8 ounces cream cheese, room temperature
  • 8 ounces cool whip, thawed
  • 3/4 cup white sugar
  • FOR 3RD LAYER:
  • 1 large package raspberry jell-o
  • 2 cups boiling water
  • 1/4 cup cold water
  • 3-4 cups fresh or frozen raspberries

How To Make have a merry christmas raspberry pretzel bars!

  • Step 1
    For 1st Layer: Combine crushed pretzels, butter, and sugar in a 9x13 baking dish. Bake at 400 degrees for 10 minutes. Refrigerate for 2 hours.
  • Step 2
    For 2nd Layer: Cream together cream cheese, Cool Whip, and sugar. Pour on top of pretzel crust. Refrigerate for 2 hours.
  • Step 3
    For 3rd Layer: Combine the Jell-O and boiling water, then add cold water and stir until the gelatin has dissolved. Add fresh or frozen berries and pour on top of cream cheese mixture. Refrigerate until Jell-O has set.(about 2 hours).
  • Step 4
    Cut into 12 bars, decorate w/ Redi Whip and a raspberry, and SERVE! Makes a fun and festive presentation for your holiday table.
