gooseberry suprise bars

Gooseberry's are only in season for a few weeks each year but the freeze well. I got the original recipe from a friend in the Republic of Panama about 27 years ago and Have done some tweeking for my families tastes. My son LOVES these bars.

Ingredients

  • CRUST:
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup butter, cold
  • TOPPING:
  • 2 - eggs
  • 1 cup brown sugar, firmly packed
  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups gooseberries cooked ( i cook mine with 1 tbsp sugar per 1/2 cup berries and a little water for 10-15 minutes then hit with imersion blender till well blended.)
  • 3/4 cup honey

How To Make gooseberry suprise bars

  • Step 1
    CRUST: Blend together butter flour and brown sugar with pastry blender until crumbly and well blended. Press into pan and bake at 350 degrees for 20 minutes.
  • Step 2
    TOPPING: Beat eggs and brown sugar until fluffy. Add baking powder and salt to flour; blend into egg mixture. Stir in gooseberries. Spread over baked crust. Bake for 20-25 minutes.
  • Step 3
    Cool on cooling rack and cut into bars.
