gooseberry suprise bars
Gooseberry's are only in season for a few weeks each year but the freeze well. I got the original recipe from a friend in the Republic of Panama about 27 years ago and Have done some tweeking for my families tastes. My son LOVES these bars.

Ingredients
- CRUST:
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1 cup butter, cold
- TOPPING:
- 2 - eggs
- 1 cup brown sugar, firmly packed
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups gooseberries cooked ( i cook mine with 1 tbsp sugar per 1/2 cup berries and a little water for 10-15 minutes then hit with imersion blender till well blended.)
- 3/4 cup honey
How To Make gooseberry suprise bars

Step 1CRUST: Blend together butter flour and brown sugar with pastry blender until crumbly and well blended. Press into pan and bake at 350 degrees for 20 minutes.

Step 2TOPPING: Beat eggs and brown sugar until fluffy. Add baking powder and salt to flour; blend into egg mixture. Stir in gooseberries. Spread over baked crust. Bake for 20-25 minutes.

Step 3Cool on cooling rack and cut into bars.
