Looking for a midmorning snack, dessert, breakfast on the run or just good eating? Try these healthy fruit and nut balls/bars. They are gluten free and good for you, too. Children like to help!!

Ingredients

  • 1 cup 100 % natural peanut butter (or substitute)
  • 1 cup honey
  • 3 cups old fashioned oats
  • 1/2 cup ground flaxseed
  • 1 cup dark chocolate chips (or favorite substitutes)
  • 1 cup nuts and dried soft fruit combination, chopped (your choice)

How To Make gluten free fruit and nut balls

  • Step 1
    Mix honey and peanut butter until smooth with a mixer. Remove from mixer blades and gradually add oats and flax seed and start mixing with your hand. Next add chocolate chips and mix again by hand. When everything is mixed in well, take a teaspoon of dough and roll into a small ball (or flattened if desired). Store in a closed container in refrigerator with wax or parchment paper between layers so they won't stick. NOTE: These can be pressed into muffin liners and then stacked on each other in your container in the refrigerator. Easy to serve this way too.
