fresh summer berry, cream cheese bars

I had just bought all these fresh berries and didn't know what to do, beside eat them right out of the bowl, lol. I thought a fresh creamy pie or dessert bars would be good. And to top it off with fresh berries to give a taste of the soon to be here summer. Delicious, not heavy, very refreshing tasting!

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup graham cracker crumbs
  • 1 cup finely chopped walnuts
  • 1/2 cup finely chopped walnuts
  • 1/3 cup quick-cooking oatmeal
  • 4 tablespoons sugar
  • 1/2 cup sugar
  • 1 stick melted butter
  • 3 - 8 oz pkgs cream cheese, softened
  • 2 teaspoons vanilla
  • 2 cups cool whip, thawed
  • 2 cups each, blackberries, wild blueberries
  • 2 cups sliced strawberries
  • 3-4 tablespoons all natural strawberry preserves, or you can use strawberry flavored ice cream syrup

How To Make fresh summer berry, cream cheese bars

  • Step 1
    Heat oven to 350. Lightly spray a 9" x 13" baking pan with cooking spray. In lg bowl, combine cracker crumbs, walnuts, oats, 4 tbsp sugar and melted butter, stirring as you pour in the butter.
  • Step 2
    Press crumb mix into bottom of pan and smooth out. Bake 10 mins and let cool. In another lg bowl, Beat cream cheeses, remaining sugar and vanilla until smooth. Slowly and on low speed, mix in cool whip.
  • Step 3
    Spread cream cheese mix evenly over crust, arrange berries over filling. Refrigerate until ready to use. To serve, place a slice on a plate. Microwave the strawberry preserves in the microwave for about 20 seconds, or until mostly melted. Drizzle sauce over the berries and serve.Enjoy:-)
