fresh pineapple salad

I got this recipe from The Ayurvedic Cookbook. It's a very simple salad. I think this would be good mixed with some coconut (or other flavored) yogurt.

Ingredients

  • 1 - fresh ripe, sweet pineapple
  • 1 cup sweet raisins
  • 1/4 cup (dried) unsweetened coconut, shredded etc.
  • 1 tablespoon fresh mint leaves
  • 1 cup coconut yogurt (optional)

How To Make fresh pineapple salad

  • Step 1
    Use a sweet ripe pineapple for this recipe. Peel and core it. Cut into 1" cubes.
  • Step 2
    Mix the rest of the ingredients and if you like add some coconut yogurt to it, I think it really would add here. This can be stored in the fridge for 6-8 hours.
