I got this recipe from The Ayurvedic Cookbook. It's a very simple salad. I think this would be good mixed with some coconut (or other flavored) yogurt.

Ingredients

  • 1
    fresh ripe, sweet pineapple
  • 1 c
    sweet raisins
  • 1/4 c
    (dried) unsweetened coconut, shredded etc.
  • 1 Tbsp
    fresh mint leaves
  • 1 c
    coconut yogurt (optional)

How to Make Fresh Pineapple Salad

Step-by-Step

  1. Use a sweet ripe pineapple for this recipe. Peel and core it. Cut into 1" cubes.
  2. Mix the rest of the ingredients and if you like add some coconut yogurt to it, I think it really would add here. This can be stored in the fridge for 6-8 hours.
  3. Enjoy!
