I got this recipe from The Ayurvedic Cookbook. It's a very simple salad. I think this would be good mixed with some coconut (or other flavored) yogurt.

Ingredients

fresh ripe, sweet pineapple
1 c
sweet raisins
1/4 c
(dried) unsweetened coconut, shredded etc.
1 Tbsp
fresh mint leaves
1 c
coconut yogurt (optional)

How to Make Fresh Pineapple Salad

Step-by-Step

  • 1Use a sweet ripe pineapple for this recipe. Peel and core it. Cut into 1" cubes.
  • 2Mix the rest of the ingredients and if you like add some coconut yogurt to it, I think it really would add here. This can be stored in the fridge for 6-8 hours.
  • 3Enjoy!
