Finally I got to cook some of those wonderful Fredericksburg peaches before we ate them right out of the basket. This is the result. I hope you like it.

Ingredients
- SOUR CREAM CRUST
- 1-1/4 cup flour
- 2 tablespoons sour cream
- 1/4 teaspoon salt
- 1/2 cup butter (1 stick)
- PEACH FILLING
- 1 quart thinly sliced fresh peaches
- 1 cup granulated sugar
- 3 large egg yolks
- 1/3 cup sour cream
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 dash rum extract (optional)

Step 1TO MAKE CRUST: Combine the flour, sour cream and salt in a large mixing bowl and mix well with wooden spoon. Cut in the butter until dough is crumbly.

Step 2Preheat oven to 375º Lightly spray or oil a 9" x 9" cooking dish or pan. Press teh dough mixture into the bottom of baking dish. Place in preheated oven and bake for 20 minutes. Remove from oven.

Step 3TO MAKE THE TART: Remove the pit and thinly slice the fresh peaches (do not peel) Arrange the peaches over the baked dough.

Step 4Combine the sugar, egg yolks, sour cream, flavorings and salt in a mixing bowl Beat at low speed until blended. Ladle over the peaches.

Step 5Return dish to preheated oven. Bake for 45 minutes . Remove from oven and let stand until cool before serving.
