fresh blueberry cobbler

My family loves Blueberries, so I was experimenting on cobblers and my husband decided after all of the ones that I played with, this was the one he liked the best. It has more of a cake type texture. Goes really well with ice cream or whipped topping.

Ingredients

  • 1/2 cup butter, unsalted (melted)
  • 1 cup sugar
  • 1 cup plain flour, sifted
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup sugar (sprinkle over berries and let set for 15 minutes)
  • 1 1/2 teaspoons cinnamon (optional)
  • 1 tablespoon lime juice
  • 2 cups blueberries, fresh

How To Make fresh blueberry cobbler

  • Step 1
    Place blueberries in a medium sized bowl. Sprinkle with 1/2 c sugar, cinnamon and lime juice. Stir to incorporate, set aside.
  • Step 2
    In bowl, add top 6 ingredients, mixing together just until well incorporated.
  • Step 3
    Place berry mixture in a 9 inch baking dish. Pour crust mixture over berries. Bake at 350 degrees for 30 minutes or until lightly browned.
