fresh blackberry bars

I had some containers of fresh blackberries I needed to use up. Called my aunt for one of her many recipes I love..they are so good, with just a hint of orange to accent the blackberries. They are so good.. My whole family enjoys these. I hope you try them. My photo's

Ingredients

  • CRUST
  • 1 - 1 /2 cups flour
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 1 - 1/2 sticks butter, chilled
  • FILLING
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 tablespoon orange zest
  • 6 tablespoons flour
  • 1/2 teaspoon vanilla
  • 8 - 9 ounces fresh blackberries, or you could use frozen
  • 2 - eggs
  • pinch - salt

How To Make fresh blackberry bars

  • Step 1
    Preheat oven to 350 degree F. Grease an 9 x 9 baking pan, set aside.
  • Step 2
    Combine the flour, sugar, and salt. ( I used my food processor for this step ). Cut the butter into 1/2-inch cubes, and add to the flour mixture. Using a fork for pastry cutter or food processor, cut the butter in until mixture resembles coarse crumbs. Set aside 3/4 cup of crumbs for topping.
  • Step 3
    Press the remaining mixture into the bottom of the pan, and bake for 10-12 minutes. Cool for 10 minutes.
  • Step 4
    Beat the eggs in a large bowl, then add the white and brown sugar, sour cream, flour, salt, orange zest and vanilla extract. Gently fold in the berries and pour the mixture over the cooled crust.
  • Step 5
    Sprinkle the remaining crumbs evenly over the fruit filling. Bake for 35 - 45 minutes.
  • Step 6
    Cool well before cutting. I serve these alone or with a scoop of ice cream, after warming the bars in the microwave. Enjoy!
