For the past four weeks, I have been spending several afternoons a week with my granddaughter. We have planned our lunch, shopped for the groceries together, and we have been preparing the meal. Her enthusiasm is great, and I am gradually teaching her about fresh fruits and veggies which are so important for our health. I would love to help her avoid the pitfalls of eating fat, sugar, artificial sweeteners and processed food

Ingredients

  • 1 pint fresh blueberries
  • 1 pint fresh strawberries
  • 1/2 - cantaloupe, scooped or cut into pieces
  • 1/4 cup fresh orange juice
  • 1/4 cup pineapple juice, unsweetened/organic
  • 1/2 cup greek yogurt
  • 1/4 cup whipped cream, sweetened
  • 2 teaspoons cream of coconut *adjust to suit your taste

How To Make emma's wild about berries parfait!

  • Step 1
    Always rinse fresh berries, drain,and layer them in a pretty goblet or parfait dish.
  • Step 2
    For the sauce: combine the O.j. and pineapple juice, Greek yogurt, whipped cream and cream of coconut in a medium sized measuring cup or bowl. The amounts can be adjusted to suit your taste.
  • Step 3
    Spoon or pour the sauce over the layers of fruit, and if you choose top with a bit of whipped cream and a maraschino cherry!
