emma's wild about berries parfait!
For the past four weeks, I have been spending several afternoons a week with my granddaughter. We have planned our lunch, shopped for the groceries together, and we have been preparing the meal. Her enthusiasm is great, and I am gradually teaching her about fresh fruits and veggies which are so important for our health. I would love to help her avoid the pitfalls of eating fat, sugar, artificial sweeteners and processed food

Ingredients
- 1 pint fresh blueberries
- 1 pint fresh strawberries
- 1/2 - cantaloupe, scooped or cut into pieces
- 1/4 cup fresh orange juice
- 1/4 cup pineapple juice, unsweetened/organic
- 1/2 cup greek yogurt
- 1/4 cup whipped cream, sweetened
- 2 teaspoons cream of coconut *adjust to suit your taste
How To Make emma's wild about berries parfait!

Step 1Always rinse fresh berries, drain,and layer them in a pretty goblet or parfait dish.

Step 2For the sauce: combine the O.j. and pineapple juice, Greek yogurt, whipped cream and cream of coconut in a medium sized measuring cup or bowl. The amounts can be adjusted to suit your taste.

Step 3Spoon or pour the sauce over the layers of fruit, and if you choose top with a bit of whipped cream and a maraschino cherry!
