Easy Quick Homemade Jelled Berry Dessert

I developed this recipe using frozen berries but I think fresh berries would work as well. I had a small amount of several kinds of berries in my freezer and wanted to make something delicious and healthy for dessert. Any berries will work. I used stevia “Truvia” to sweeten it. A couple of tablespoons of sugar would work too, but I wanted to lower the calories. Sweeten to taste.
After you have combined all of the ingredients you could stir in banana slices if you like and chill. I have made this with strawberries, blueberries and raspberries so far.

  • 2 c
    frozen berries
  • 1/4 c
    lemon juice
  • 1 Tbsp
    gelatin, unflavored (not jello)
  • 1/4 c
  • 2 tsp
    truvia (stevia) or 2 tablespoons sugar

How to Make Easy Quick Homemade Jelled Berry Dessert


  1. Partially defrost berries to make them easier to blend.
  2. Put 1/4 c. water in a small dish or custard cup. Sprinkle 1 tablespoon unsweetened gelatin on top if the water to soften it. Not necessary to stir in.
  3. Put 1/4 c. lemon juice into a small saucepan. Add berries and blend them using an immersion blender.
  4. Heat over low heat until simmering. Simmer for a couple of minutes.
  5. Remove pot from heat and add the softened gelatin and water. Stir to combine. Taste for desired sweetness. Add sweetener and stir in completely.
  6. Pour the berry mixture into a bowl and cool in the fridge for a couple of hours or until firm.
    Serves 4.
