Great autumn or winter dish when fresh fruit isn’t available. You can sub dried cherries or raisins for the cranberries.

Ingredients

  • 1 1/2 cups water
  • 1 1/2 cups orange juice
  • 1/4 cup maple syrup
  • 1 stick (3 inches) cinnamon stick
  • 1 (3 inch piece) vanilla bean, split open
  • 2 tablespoons chopped crystallized ginger
  • 6-8 dried figs
  • 6-8 pitted dates
  • 1 cup dried apricot halves
  • 8-10 prunes, pitted
  • 1/2 cup dried cranberries

How To Make dried fruit compote

  • Step 1
    Place the water, juice, maple syrup, cinnamon stick and vanilla bean in a saucepan large enough to hold all the dried fruit
  • Step 2
    Bring to a boil over high heat. Turn the heat to medium low and simmer for 15 minutes.
  • Step 3
    Add the fruit and simmer for another 15-20 minutes, or until the fruit is soft. Let the fruit cool in the pan
  • Step 4
    Discard the cinnamon stick and vanilla bean. Let cool. Serve with the poaching liquid.
