dessert essentials: balsamic grilled peaches

These are easy/peasy to produce, taste awesome. and make a great presentation. I am using goat’s cheese to provide a wonderful challenger to the sweetness of the grilled peach; however, you could use some ricotta cheese, or another filling. In fact, you could leave the filling out, and just eat the peach with the balsamic reduction and walnuts… Up to you. You are the chef… You are in control. So, you ready… Let’s get into the kitchen.

Ingredients For dessert essentials: balsamic grilled peaches

  • PLAN/PURCHASE
  • 1 lg
    ripe, ripe peach, cut in half, seed removed
  • 2 slice
    fresh pineapple
  • 2 Tbsp
    fresh clover honey
  • 1 Tbsp
    bourbon
  • 4 Tbsp
    creamy plain goat’s cheese
  • 2 Tbsp
    balsamic reduction
  • 2 Tbsp
    chopped walnuts
  • 1 Tbsp
    grapeseed oil

How To Make dessert essentials: balsamic grilled peaches

    Gather your Ingredients (mise en place).

    Chef's Note: I tried peaches at different levels of ripeness, and the ones that work the best are the ripest ones you can find. The kind that are so ripe, if you press, you can leave an indentation in the skin of the peach.

    Using a small bowl, mix together the honey and bourbon.
  • 5
    Brush the two cut portions of the peach, and the pineapple, with the honey/bourbon mixture.

    Brush the grill grate with the grapeseed oil.
  • 7
    Place the peaches, cut side down, and the pineapple onto the hot grill.

    Chef’s Note: If you do not wish to grill these, you can always use a grill pan (as I am doing), or you can just sear them in a hot pan. The reason for the grill is to get those nice grill marks.

    Chef's Note: Allow to cook, until they begin to soften, and develop some nice grill marks, about 3 – 4 minutes.

    Turn the peaches and pineapple over, and allow to cook for an additional 2 – 3 minutes.

    Add the pineapple slices to serving plates, and then add the peach.

    Divide the goat’s cheese between the two peaches.

    Sprinkle with the chopped walnuts.

    Drizzle with the balsamic reduction.

    Serve while still warm from the grill. Enjoy.
