dessert essentials: balsamic grilled peaches
These are easy/peasy to produce, taste awesome. and make a great presentation. I am using goat’s cheese to provide a wonderful challenger to the sweetness of the grilled peach; however, you could use some ricotta cheese, or another filling. In fact, you could leave the filling out, and just eat the peach with the balsamic reduction and walnuts… Up to you. You are the chef… You are in control. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 large ripe, ripe peach, cut in half, seed removed
- 2 slices fresh pineapple
- 2 tablespoons fresh clover honey
- 1 tablespoon bourbon
- 4 tablespoons creamy plain goat’s cheese
- 2 tablespoons balsamic reduction
- 2 tablespoons chopped walnuts
- 1 tablespoon grapeseed oil

Step 2Gather your Ingredients (mise en place).

Step 3Chef's Note: I tried peaches at different levels of ripeness, and the ones that work the best are the ripest ones you can find. The kind that are so ripe, if you press, you can leave an indentation in the skin of the peach.

Step 4Using a small bowl, mix together the honey and bourbon.

Step 5Brush the two cut portions of the peach, and the pineapple, with the honey/bourbon mixture.

Step 6Brush the grill grate with the grapeseed oil.

Step 7Place the peaches, cut side down, and the pineapple onto the hot grill.

Step 8Chef’s Note: If you do not wish to grill these, you can always use a grill pan (as I am doing), or you can just sear them in a hot pan. The reason for the grill is to get those nice grill marks.

Step 9Chef's Note: Allow to cook, until they begin to soften, and develop some nice grill marks, about 3 – 4 minutes.

Step 10Turn the peaches and pineapple over, and allow to cook for an additional 2 – 3 minutes.

Step 11Add the pineapple slices to serving plates, and then add the peach.

Step 12Divide the goat’s cheese between the two peaches.

Step 13Sprinkle with the chopped walnuts.

Step 14Drizzle with the balsamic reduction.

Step 15PLATE/PRESENT

Step 16Serve while still warm from the grill. Enjoy.
