creamy frozen strawberry pie
This recipe was in my recipe column in the Henderson News a few years back when I was writing the recipe column...this was received very well by my readers.

Ingredients
- 8 ounces container cool whip ,thawed
- 1 1/2 cups crushed and sweetened strawberries or 10 oz. pkg. thawed strawberries or raspberries
- 1 cup dairy sour cream
- 1 cup mini marshmallows
- 1 cup thawed cool whip
How To Make creamy frozen strawberry pie

Step 1Spoon the 8 oz. thawed cool whip into a 9-inch pie pan to form a shell with back of spoon. freeze until firm.

Step 2Combine strawberries and sour cream, mixing with electric mixer until well blended.

Step 3Fold in remaining whipped cream and marshmallows.

Step 4Spoon mixture into frozen cool whip shell; garnish top with Strawberry and mint leaf.(I forgot to save a whole berry slice and the mint leaf). Place this dessert in freezer until frozen then let thaw in refrigerator. Like you would Cool Whip. After it's servedstorer in refrigerator it will be perfect there;no need to freeze again. --- Note: I have found that it is better to put the filling in the pie plate then frost with the cool whip and garnish top before the freeze. Then the same as above; freeze then thaw in refrigerator -then store any leftovers in refrigerator not the freezer.
