While trying to eat healthier I came across this recipe. It uses ground flaxseed,oats, cherries and cranberries. It's really quite good and my son-in-law says their great. Hope you enjoy! For weight-watchers the points are 6

Ingredients

  • 4 ounces dried cherries, finely chopped
  • 4 ounces dried cranberries, finely chopped
  • 1/2 cup water
  • 2 teaspoons vanilla
  • 1 cup quick cooking oats
  • 1/2 cup ground flaxseed
  • 1 1/2 cups unbleached or all-purpose flour
  • 1/4 cup firmly packed brown sugar
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup +2tablespoons light pancke syrup+1 teaspoon maple flavoring
  • 4 tablespoons butter or canola margarine, melted
  • 1/3 cup finely chopped pecans or walnuts

How To Make cran-cherry oat bars

  • Step 1
    Pre heat oven to 350'F. Combine cherries & cranberries in small saucepan with 1/2 c. water and bring to a boil. Reduce heatr and simmer until thickened,stirring frequently ( about 3 mins.) Remove from heat and stir in vanilla; set aside.
  • Step 2
    In mixing bowl, combine oats, flaxseed, flour, brown sugar, baking soda and salt. Mix well with a pastry blender or electric mixer. Drizzle belted butter and pancake syrup over the top or oat mixture and blend with pastry blender or mixer.
  • Step 3
    Spread 2 cups of oat mixture in the bottom of an 8 inch or 9 inch square baking pzn, coated with canola cooking spray and press firmly. spread cherry fillin evenly on top.
  • Step 4
    Combine pecans with remaining oat mixture using pastry blender or fork and pat firmly and evenly on tip of filling. Bake at 350'F in center of oven for 20 minutes or until golder brown. Let cool. Cut into squares. ENJOY!!
