chilled strawberry soup

This is a recipe from the owner of my favorite restaurant growing up. Unfortunately, they have long closed, but fortunately, I have some of her wonderful, delicious recipes! This soup is served cold, & a perfect starter (or dessert) in the summer months. Very versatile. Enjoy. Note: I only use 1 & 1/2 cup of sour cream, not 2 cups, just out of preference. However, the original recipe calls for 2.

Ingredients

  • 2 cups whipping cream (not whipped)
  • 2 cups sour cream
  • 2 cups strawberries, crushed (fresh or frozen thawed)
  • 3 tablespoons burgundy wine
  • 3 tablespoons sugar

How To Make chilled strawberry soup

  • Step 1
    Mix the sour cream with the whipping cream gently. Then add the strawberries & mix well.
  • Step 2
    Add burgundy & sugar, mix, & refrigerate or serve immediately.
  • Step 3
    Optional: Whip 1 cup of whipping cream stiff & then mix in 1 cup of sour cream. Place a heaping spoonful of this on top of each bowl, if desired.
