cherry dumplings

I can't remember where I got this - probably on an internet search when we had ripe cherries and I wanted to make something other than cherry pie. I've also made this in the dead of winter using a bag of mixed berries. I added the almond extract and cinnamon to the original recipe.

Ingredients

  • 2 cups sour cherries
  • 3/4 cup sugar
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter
  • DUMPLING DOUGH INGREDIENTS
  • 1 cup flour
  • 2 teaspoons baking powder
  • pinch - salt (a pinch is about 1/8 tsp.)
  • 3 tablespoons crisco
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk

How To Make cherry dumplings

  • Step 1
    Mix the cherries, sugar, cinnamon and almond extract in a deep pot that has a lid. Bring the mixture to a simmer over med heat.
  • Step 2
    In a large bowl whisk together the flour, baking soda and salt. Cut in 3 tablespoons Crisco until the mixture is crumbly
  • Step 3
    Beat together the egg, vanilla extract and milk. Stir GENTLY into the dry ingredients just until incorporated.
  • Step 4
    Drop the dough by a spoon onto the bubbling cherry mixture. Cook 10 minutes without the lid. Cover the pan and cook 10 minutes more.
