caramel apple raisin cobbler

This recipe happened as a "throw together" for National Oatmeal Day when I needed to use up some Granny Smith apples. It tastes great cold, but it's FANTASTIC when warmed up and served with freshly whipped cream or ice cream! Visit my food blog at www.itsyummi.com

Ingredients

  • 1/2 cup butter, unsalted
  • 1/4 cup shortening, butter flavor
  • 1 cup brown sugar, firmly packed
  • 1 3/4 cups all purpose flour
  • 1 cup quick cooking or old fashioned oats
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts (optional)
  • FILLING
  • 1/2 cup raisins, craisins, or dried cherries
  • 3 cups peeled & chopped apples, dusted with 3 tablespoons of flour or 21oz of apple pie filling
  • 11 ounces caramels
  • 3 tablespoons butter, unsalted

How To Make caramel apple raisin cobbler

  • Step 1
    Preheat oven to 400 degrees F.
  • Step 2
    In a bowl, cream butter, shortening and brown sugar until fluffy.
  • Step 3
    Add flour, oats, salt and baking soda; mix well. Stir in nuts, if desired. Set aside 1 ½ cups of the mixture.
  • Step 4
    Press the remaining mixture into an ungreased 11-in. x 8-in. baking pan.
  • Step 5
    Sprinkle the dried fruit over the oatmeal mixture, and place the apples on top.
  • Step 6
    In a saucepan, melt the caramels and butter over medium low heat; drizzle over the apples.
  • Step 7
    Top with the reserved oatmeal mixture.
  • Step 8
    Bake at 400° F (375° F convection) for 20-25 minutes or until lightly browned. Best served warm.
