Blueberries are so plentiful and delicious this time of year that I wanted to make a good but easy blueberry cobbler.
I found this recipe on allrecipes.com and have added an extra cup of blueberries to it.
It was a hit with the family for our Saturday dinner.

Ingredients

  • 4 c
    fresh blueberries
  • 3 Tbsp
    white sugar
  • 1 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/2 c
    butter
  • 1/2 c
    white sugar
  • 1
    egg
  • 1/2 tsp
    vanilla extract
  • 1/3 c
    orange juice, fresh

How to Make Bountiful Blueberry Cobbler

Step-by-Step

  1. Mix blueberries, 3 tablespoons sugar and orange juice together in a bowl. Set aside.
    Mix flour and baking powder in a small bowl. Set aside.
  2. Cream butter and 1/2 cup sugar in a bowl with an electric mixer. Add egg and vanilla. Gradually add flour mixture.
    Place blueberry mixture in an 8 inch baking dish.
  3. Place the batter over the blueberries as evenly as possible covering the filling.
    Bake in a preheated oven at 375' for 40 minutes until the topping is golden brown and filling is bubbling. Enjoy !!
