Baked Pineapple

1 can(s)crushed pineapple (larger can with juice)

2eggs
-
1/2 cwhite sugar

1 Tbspcornstarch
-
1 tspsalt

·butter, cold
How to Make Baked Pineapple
- Preheat oven to 350
- Mix together pineapple, cornstarch, sugar
- Add 2 beaten eggs and salt to mixture
- Pour mixture into quart type pan, can be glass or anything else you prefer
- Dot top of mixture with slices of butter and sprinkle with cinnamon
- Bake at 350 for 45 minutes; top should be golden brown
- Serve with baked Ham
- Double recipe for large casserole... it is always best to have extra; my kids love to eat it later with the leftover ham.
