My Grandfather Barcelo learned a similar recipe from his family while living on the Iberian Coast in the 1800's. This recipe I found online, but it still carries the old Spanish flavors.

Ingredients

  • 4 - bananas
  • 1 - orange
  • 2 tablespoons dark rum
  • 50 grams brown sugar
  • 30 grams butter

How To Make baked bananas

  • Step 1
    Peel and slice the bananas (thick slices) and place in a heat proof serving dish.
  • Step 2
    Pour the orange juice from zested and juiced orange and rum over the sliced bananas then sprinkle with the sugar and grated rind of the orange
  • Step 3
    Cut the butter into small cubes and place on top of the bananas Cover with foil and place in a preheated oven (180 degrees Celsius) for 15 mins Serve warm with fresh cream or vanilla ice cream
