baked apple rhubarb cobbler

A friend of mine has a huge garden and he has lots of rhubarb and goes around the neighborhood giving his neighbors as much as they want..I freeze some and will make rhubarb and strawberry jam and this cobbler..and since my friend is alone I will give him some of the rhubarb goodies.

Ingredients
- 4 cups fresh rhubarb or frozen
- 2 cups peeled and diced apples
- 2 cups sliced strawberries
- 1/2 cup liquid honey
- 2 tablespoons grated lemon or orange zest
- - topping
- 1 - egg
- 1/2 cup melted butter
- 1/2 cup liquid honey
- 1/4 cup orange or lemon juice
- 1 1/2 cups whole wheat flour
- 3/4 cup chopped toasted walnuts or hazelnuts
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
How To Make baked apple rhubarb cobbler

Step 1Preheat oven to 375F..butter a 13 x 9 x 3 baking pan..in bowl mix together the fruit, hone and zest and spread evenly into prepared pan.

Step 2TOPPING in bowl whisk together egg,milk, butter, honey and juice without stirring, sprinkle with flour, nuts, baking powder and baking soda,,stir with wooden spoon just until moistened.

Step 3Pour topping evenly over fruit spreading gently to cover...Bake 30 to 40 minutes or fruit is bubbling and topping is golden and tester inserted in center comes out clean...let stand for at least 5 minutes before serving..serve warm or hot...a dollop of ice cream is yummy....enjoy
