This recipe comes from a recipe book published by my church and distributed to the needy with food orders that provide basic staples, meat, fresh fruits and produce, etc. I especially like this book, as it features very low cost, nutritious recipes that are great tasting. This one is not one that I have seen before, so I am sharing it with you.

2 c
cooked rice or whole wheat
4 c
sliced apples
1/4 c
brown sugar
2 Tbsp
lemon juice
1 tsp
grated lemon rind
toffee mixture:
1/2 c
all-purpose flour
3/4 c
brown sugar
1 tsp
ground cinnamon
1/2 c
butter or margarine

How to Make Apple Rice Toffee


  • 1Mix together all of the ingredients. Turn into a buttered 9 x 9 inch baking dish. Add 1/4 cup of water. Cover apples and rice completely with Toffee Mixture.
  • 2Bake at 350 degrees F for 45 minutes.
  • 3Toffee Mixture:
  • 4Combine together all ingredients but the butter. Cut the butter into the mixture until the size of small peas.

    Serve with milk, evaporated milk, half and half or cream.
