This recipe comes from a recipe book published by my church and distributed to the needy with food orders that provide basic staples, meat, fresh fruits and produce, etc. I especially like this book, as it features very low cost, nutritious recipes that are great tasting. This one is not one that I have seen before, so I am sharing it with you.

Ingredients

  • 2 c
    cooked rice or whole wheat
  • 4 c
    sliced apples
  • 1/4 c
    brown sugar
  • 2 Tbsp
    lemon juice
  • 1 tsp
    grated lemon rind
  • ·
    toffee mixture:
  • 1/2 c
    all-purpose flour
  • 3/4 c
    brown sugar
  • 1 tsp
    ground cinnamon
  • 1/2 c
    butter or margarine

How to Make Apple Rice Toffee

Step-by-Step

  1. Mix together all of the ingredients. Turn into a buttered 9 x 9 inch baking dish. Add 1/4 cup of water. Cover apples and rice completely with Toffee Mixture.
  2. Bake at 350 degrees F for 45 minutes.
  3. Toffee Mixture:
  4. Combine together all ingredients but the butter. Cut the butter into the mixture until the size of small peas.

    Serve with milk, evaporated milk, half and half or cream.
