This recipe comes from a recipe book published by my church and distributed to the needy with food orders that provide basic staples, meat, fresh fruits and produce, etc. I especially like this book, as it features very low cost, nutritious recipes that are great tasting. This one is not one that I have seen before, so I am sharing it with you.

Ingredients
- 2 cups cooked rice or whole wheat
- 4 cups sliced apples
- 1/4 cup brown sugar
- 2 tablespoons lemon juice
- 1 teaspoon grated lemon rind
- - toffee mixture:
- 1/2 cup all-purpose flour
- 3/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup butter or margarine
How To Make apple rice toffee

Step 1Mix together all of the ingredients. Turn into a buttered 9 x 9 inch baking dish. Add 1/4 cup of water. Cover apples and rice completely with Toffee Mixture.

Step 2Bake at 350 degrees F for 45 minutes.

Step 4Combine together all ingredients but the butter. Cut the butter into the mixture until the size of small peas. Serve with milk, evaporated milk, half and half or cream.
