Ingredients
- 4 medium cooking apples, peeled and sliced
- 1 cup water
- 1/2 cup firmly packed brown sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- 2 teaspoons cornstarch
- 1 tablespoon cold water
- 1/2 cup buttermilk
- 1/4 cup sugar
- 1/4 cup molasses
- 2 tablespoons vegetable oil
- 1 large egg
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
How To Make apple-gingerbread cobbler

Step 1Combine the first 5 ingredients in a medium saucepan; stir well. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until the apple is tender.

Step 2Combine the cornstarch and 1 tablespoon water; add to the apple mixture, stirring well. Pour into a lightly greased 2-quart baking dish.

Step 3Combine the buttermilk, 1/4 cup sugar, molasses, oil, and egg in a small mixing bowl; beat at medium speed of an electric mixer until smooth.

Step 4Combine the flour and the remaining ingredients; stir well. Add to the buttermilk mixture, beating until blended. Pour the batter over the apple mixture.

Step 5Bake at 350 degrees for 35 minutes or until lightly browned. Serve warm.
