Ingredients

  • 4 medium
    cooking apples, peeled and sliced
  • 1 c
    water
  • 1/2 c
    firmly packed brown sugar
  • 1 Tbsp
    lemon juice
  • 1/4 tsp
    ground cinnamon
  • 2 tsp
    cornstarch
  • 1 Tbsp
    cold water
  • 1/2 c
    buttermilk
  • 1/4 c
    sugar
  • 1/4 c
    molasses
  • 2 Tbsp
    vegetable oil
  • 1 large
    egg
  • 1 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 tsp
    ground ginger
  • 1/4 tsp
    ground nutmeg

How to Make Apple-Gingerbread Cobbler

Step-by-Step

  1. Combine the first 5 ingredients in a medium saucepan; stir well. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until the apple is tender.
  2. Combine the cornstarch and 1 tablespoon water; add to the apple mixture, stirring well. Pour into a lightly greased 2-quart baking dish.
  3. Combine the buttermilk, 1/4 cup sugar, molasses, oil, and egg in a small mixing bowl; beat at medium speed of an electric mixer until smooth.
  4. Combine the flour and the remaining ingredients; stir well. Add to the buttermilk mixture, beating until blended. Pour the batter over the apple mixture.
  5. Bake at 350 degrees for 35 minutes or until lightly browned. Serve warm.
