apple cinnamon bombs
I made these often for my kids as an after-school snack. Great source of protein and an added serving of fruit... Great for "big kids" like me as well! :) Make the night before, when time is short in the morning, for an "eat and run" breakfast.

Ingredients
- 4 large granny smith apples
- 1/2 cup peanut butter- reduced fat, honey, chunky or regular
- 1/2 teaspoon ground cinnamon
How To Make apple cinnamon bombs
-
Step 1Mix peanut butter and cinnamon in a small bowl.
-
Step 2Cut apples into wedges with a knife or an apple slicer without cutting all of the way through. Core the apple.
-
Step 3Place the apple in the palm of your hand, loosely holding the wedges while you fill with peanut butter mixture. (Don't overfill or peanut butter will ooze out sides when you put it back together.)
-
Step 4Press wedges together and top off with a little more peanut butter. Can be made the night before, if wrapped tightly in saran wrap.
