- 1 1/2 cups minute white rice, uncooked
- 12 ounces evaporated milk
- 1 cup 100% solid pumpkin
- 1 cup water
- 1/2 cup packed dark brown sugar
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
How To Make pumpkin pie rice pudding

Step 1Combine rice and remaining ingredients, except vanilla in a medium saucepan. Cook over medium heat for 20 minutes, stirring frequently.

Step 2Remove from heat and stir in vanilla extract. Let stand 5 to 10 minutes.

Step 3Serve garnished with a dusting of pumpkin pie spice, graham crackers, whipped cream or pecans, if desired.
