Ingredients

  • 1 1/2 c
    minute white rice, uncooked
  • 12 oz
    evaporated milk
  • 1 c
    100% solid pumpkin
  • 1 c
    water
  • 1/2 c
    packed dark brown sugar
  • 2 tsp
    pumpkin pie spice
  • 1/4 tsp
    salt
  • 1 tsp
    vanilla extract

How to Make Pumpkin Pie Rice Pudding

Step-by-Step

  1. Combine rice and remaining ingredients, except vanilla in a medium saucepan. Cook over medium heat for 20 minutes, stirring frequently.
  2. Remove from heat and stir in vanilla extract. Let stand 5 to 10 minutes.
  3. Serve garnished with a dusting of pumpkin pie spice, graham crackers, whipped cream or pecans, if desired.
