haupia coconut pudding
This is my grandma's traditional Hawaiian recipe. Traditional Hawaiian dessert. Originally haupia was prepared with arrowroot (pia) mixed with coconut cream. It was wrapped in ti leaves and baked in the imu.

Ingredients
- 12 ounces coconut milk, frozen or canned
- 10 tablespoons sugar (just shy 1 cup)
- 1/2 cup cold water

How To Make haupia coconut pudding
-
Step 1Combine cold water with cornstarch and blend until smooth.
-
Step 2Then combine with coconut and sugar in a sauce pan and stir until thick over medium heat. Lower heat and cook for 10 minutes, stirring to prevent lumps and to keep from burning. Mixture will get smooth and glossy.
-
Step 3Pour into an 8 inch square pan and chill until set. Cut into 1 inch squares.
-
Step 4Haupia Twist: Substitute the coconut milk with 1 can of crushed pineapple and blend to liquify (use a blender or food processor). Continue with directions above and layer on top of the coconut layer.
