I wanted to try something different. I make homemade egg Nog,and was looking to do something different with it. Left over Egg Nog from the holidays. Here's a delicious dessert to use up that Egg Nog. You can use Reduced Fat Egg Nog as I did,or the fatty type.Easy quick dessert. I hope you all enjoy it. Happy Holidays friends..

cooked white rice
1 3/4 c
1/2 c
5 tsp
corn starch
1/4 c
brown sugar
1/4 c
1/4 c
chopped apricots
1/2 tsp
1 tsp tsp
1 tsp
1/4 c
chopped pecans
whipped cream for garnish

How to Make Egg Nog Rice pudding with cranberries and Apricots


  • 1Cook white rice according to package directions.
  • 2In a sauce pan boil 1 3/4 cup of eggNog with brown sugar,cinnamon,Apricots,dried cranberries,and nutmeg. Bring to a boil. Remove from heat for a moment.
  • 3mix the 1/2 cup of eggnog with the 6 tsp of corn starch with a whisk. Whisk in to the pan with the other ingredients. Return to stove. Cook until thickened,Stirring constantly. Add rice,and combine. Put in to fridge until cool. When ready to serve. Sprinkle Pecans on top with whipped cream.
