egg nog rice pudding with cranberries and apricots

I wanted to try something different. I make homemade egg Nog,and was looking to do something different with it. Left over Egg Nog from the holidays. Here's a delicious dessert to use up that Egg Nog. You can use Reduced Fat Egg Nog as I did,or the fatty type.Easy quick dessert. I hope you all enjoy it. Happy Holidays friends..

Ingredients

  • 2/14 cup cooked white rice
  • 1 3/4 cups eggnogg
  • 1/2 cup eggnog
  • 5 teaspoons corn starch
  • 1/4 cup brown sugar
  • 1/4 cup craisins
  • 1/4 cup chopped apricots
  • 1/2 teaspoon nutmeg
  • 1 tsp teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 cup chopped pecans
  • - whipped cream for garnish

How To Make egg nog rice pudding with cranberries and apricots

  • Step 1
    Cook white rice according to package directions.
  • Step 2
    In a sauce pan boil 1 3/4 cup of eggNog with brown sugar,cinnamon,Apricots,dried cranberries,and nutmeg. Bring to a boil. Remove from heat for a moment.
  • Rice pudding with cranberries and apricots
    Step 3
    mix the 1/2 cup of eggnog with the 6 tsp of corn starch with a whisk. Whisk in to the pan with the other ingredients. Return to stove. Cook until thickened,Stirring constantly. Add rice,and combine. Put in to fridge until cool. When ready to serve. Sprinkle Pecans on top with whipped cream.
