-
Step 1In a 2 qt saucepan on low heat combine milk, sugar, flour, salt , and egg yolks. Turn heat to medium and whisk constantly until it thickens. (Don't walk away because it may scorch) Take off the heat and whisk in the butter and vanilla.
-
Step 2In a 9x9 in casserole dish layer a generous portion of wafer cookies, then top with a generous portion of sliced bananas (2 1/2) run them even up the sides of the dish, then top with half of the custard and then more wafers, and the other (2 1/2 ) bananas, and then the last of the custard.
-
Step 3In a separate glass bowl ( make sure it is grease free) beat on high with wire whisks beaters the 4 egg whites, and cream of tartar till fluffy (also make sure your whites are room temp. with no trace of yolk in them they will whip up perfect if you follow these steps) slowly add the sugar, and vanilla once the peaks form.
-
Step 4Place the meringue on top of the custard run it to the edges of the pan ( this prevents your meringue from weeping) Bake in a 350 degree oven 10 to 15 mins. or till your meringue is nice and brown.
