This takes me back to my grandmother's delicious apple pudding with vanilla sauce...tastes just like I remember hers! This is a friend's mother's recipe and is a gem! The vanilla sauce is the KEY to all the yummy-ish-ous (is that a word? You get my point!)

Ingredients

  • 1 1/4 c
    sifted flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/3 c
    butter, room temp or crisco
  • 1/2 tsp
    grated lemon rind
  • 1 tsp
    vanilla
  • 1 c
    sugar
  • 1
    egg, room temperature
  • 1 1/2 c
    diced uncooked apples
  • VANILLA SAUCE

  • 1/3 c
    sugar
  • 1 Tbsp
    cornstarch
  • 1/8 tsp
    salt
  • 1 c
    water
  • 2 Tbsp
    butter, soft
  • 1/4 tsp
    grated lemon rind
  • 1/2 tsp
    vanilla

How to Make Apple Pudding with Vanilla Sauce

Step-by-Step

  1. Pudding: (I left out the 1/4 tsp. salt and could not add it above, sorry.) Sift together the flour, salt, baking soda and baking powder. Set aside.
  2. In a large bowl, cream butter with lemon rind, vanilla and sugar. Beat in egg. Stir in flour mixture. Add apples and mix ONLY until blended.
  3. Turn into a greased and floured 8x8x2-inch pan. Bake in preheated 350 degree oven for 45 minutes or until done.
  4. Vanilla Sauce: In a medium saucepan over medium heat, combine sugar with cornstarch and salt. Gradually stir in water and mix well. Cook until medium thickness.
  5. Remove from heat and stir in butter, lemon rind and vanilla. Serve warm over apple pudding and thoroughly enjoy!
