Apple Pudding with Vanilla Sauce

Ingredients

1 1/4 csifted flour

1 tspbaking powder

1/2 tspbaking soda
-
1/3 cbutter, room temp or crisco
-
1/2 tspgrated lemon rind
-
1 tspvanilla
-
1 csugar
-
1egg, room temperature
-
1 1/2 cdiced uncooked apples
-
VANILLA SAUCE
-
1/3 csugar
-
1 Tbspcornstarch
-
1/8 tspsalt
-
1 cwater
-
2 Tbspbutter, soft
-
1/4 tspgrated lemon rind
-
1/2 tspvanilla
How to Make Apple Pudding with Vanilla Sauce
- Pudding: (I left out the 1/4 tsp. salt and could not add it above, sorry.) Sift together the flour, salt, baking soda and baking powder. Set aside.
- In a large bowl, cream butter with lemon rind, vanilla and sugar. Beat in egg. Stir in flour mixture. Add apples and mix ONLY until blended.
- Turn into a greased and floured 8x8x2-inch pan. Bake in preheated 350 degree oven for 45 minutes or until done.
- Vanilla Sauce: In a medium saucepan over medium heat, combine sugar with cornstarch and salt. Gradually stir in water and mix well. Cook until medium thickness.
- Remove from heat and stir in butter, lemon rind and vanilla. Serve warm over apple pudding and thoroughly enjoy!
