apple pudding with vanilla sauce

This takes me back to my grandmother's delicious apple pudding with vanilla sauce...tastes just like I remember hers! This is a friend's mother's recipe and is a gem! The vanilla sauce is the KEY to all the yummy-ish-ous (is that a word? You get my point!)

Ingredients

  • 1 1/4 cups sifted flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup butter, room temp or crisco
  • 1/2 teaspoon grated lemon rind
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 - egg, room temperature
  • 1 1/2 cups diced uncooked apples
  • VANILLA SAUCE
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1 cup water
  • 2 tablespoons butter, soft
  • 1/4 teaspoon grated lemon rind
  • 1/2 teaspoon vanilla

How To Make apple pudding with vanilla sauce

  • Step 1
    Pudding: (I left out the 1/4 tsp. salt and could not add it above, sorry.) Sift together the flour, salt, baking soda and baking powder. Set aside.
  • Step 2
    In a large bowl, cream butter with lemon rind, vanilla and sugar. Beat in egg. Stir in flour mixture. Add apples and mix ONLY until blended.
  • Step 3
    Turn into a greased and floured 8x8x2-inch pan. Bake in preheated 350 degree oven for 45 minutes or until done.
  • Step 4
    Vanilla Sauce: In a medium saucepan over medium heat, combine sugar with cornstarch and salt. Gradually stir in water and mix well. Cook until medium thickness.
  • Step 5
    Remove from heat and stir in butter, lemon rind and vanilla. Serve warm over apple pudding and thoroughly enjoy!
