summertime mixed fruit cobbler

A few leftover blueberries, strawberries and a peach from other dishes I've made this past week was just the perfect amount of fruit for a cobbler. I added a little orange zest to the batter and tossed some cubed cream cheese in with the fruit. It was an amazing dessert! Hope you enjoy!

Ingredients

  • 4 cups fresh fruit (i used blueberries, strawberries and peaches)
  • 2 tablespoons sugar
  • 1/2 cup butter
  • 1 1/2 cups self-rising flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • pinch salt
  • 1 teaspoon orange zest, (optional)
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 3 ounces cream cheese, cubed (optional)
  • - cinnamon sugar

How To Make summertime mixed fruit cobbler

  • Step 1
    Preheat oven to 350 degrees. Melt butter in a 9 x 13-inch pan as oven preheats being careful to not burn your butter. Once melted remove pan from oven.
  • Step 2
    Clean and cut up fruit, sprinkle with 2 tbsp sugar and gently toss; set aside.
  • Step 3
    In a medium mixing bowl, whisk together the flour, sugar, salt and orange zest. Add milk and vanilla; whisk until combined and no lumps.
  • Step 4
    Pour batter into pan with melted butter; top with fruit and cream cheese. Sprinkle cinnamon sugar on top.
  • Step 5
    Bake at 350 degrees for 40 to 45 minutes.
