mother's magic pie crust (sallye)

My mother was a topnotch baker. This recipe is from her typed notes from many years ago. I have used it for years with always excellent results.

yields 2 pie crusts
Ingredients
- 3 cups flour
- 1 cup shortening
- 1 teaspoon salt
- 1 large egg
- 1 teaspoon vinegar
- - cold water as needed
How To Make mother's magic pie crust (sallye)

Step 1Sift flour into bowl, cut in shortening with pastry blender or 2 knives.

Step 2Place egg and vinegar in a 2 cup measuring cup. Add cold water to fill to half cup level. Whisk together until well blended.

Step 3Add egg mixture to flour and mix well until dough forms a ball. ( use my hands to mix) If too dry, add more cold water a few drops at a time. This crust is always light and flaky.
